Soft cheese with dense texture, sweet, slightly tasty flavour, not spicy given the use of calf rennet. The rind is thin, dense, soft and white, with evident marks left by its straw mould. Target market: Italy and the US

it pairs well with well-structured white wines and young reds with a subtle, delicate and intense bouquet; dry, full and warm on the palate, smooth and persistent, with slightly bitter aftertaste.
