Ingredients

Serves 4:

  • 3 fennel bulbs
  • 1 orange
  • 300 g di Delizia Pepata cheese
  • salt and extra virgin olive oil as required
Method

Trim the fennel bulbs and slice into very fine discs (think carpaccio); peel the orange, remove the white pithy bits and cut into thin slices.
Place the fennel discs and slices of orange on a tray, add salt, dress with extra virgin olive oil and arrange the slices of Delizia Pepata cheese in a radial pattern. In line with current trends, this dish can be enjoyed on its own as a starter or main given the variety of its ingredients.
