Ingredients
For 4 people:
- 4 slices of rustic white bread (Pugliese variety if available)
- 4 soft prunes
- 3 tbsp mascarpone
- 200g Piccolo Canestrato cheese
- basil and parsley
- salt and pepper as required.
Method
chop up the basil and parsley, add them to the mascarpone with a pinch of salt and pepper and mix until you get a smooth cream. Heat the bread so that it’s slightly crisp, spread it with the cream you’ve made and top with the chopped prunes and diced Piccolo Canestrato cheese.
