Moliternum Giganteum
Moliterno’s big brother, this is a hard cheese aged for at least 10 months, cooked longer than our Moliterno to help with the lengthy aging. The rind is a yellowy brown and features the distinctive marks left by its traditional cane basket mould; it has a crumbly texture and white paste with an irregular pattern of eyes scattered throughout the wheel. It has a tasty flavour with spicy notes both as a result of the lamb rennet and the lengthy aging process.
Target market: Italy and worldwide
Wines
it pairs well with well-aged red wines; with an intense, complex bouquet that is particularly persistent and mellow displaying tertiary notes like leather, goudron (tar) and spices such as cinnamon, pepper or vanilla; elegant and restrained on the palate, not particularly acidic, tending instead towards a more earthy style, with tannins that give structure and persistence to a fruit that interlaces with delicious notes of liquorice and coffee.

Beers
it pairs well with highly fermented golden yellow or amber beers with an attack of floral notes followed by a sweet, fruity aroma with scents of honey; warm, enveloping in the mouth, with notes of malt and ripe pear, good effervescence, final aftertaste of dried fruit with a light, refreshing bitterness.
