Piccolo Canestrato
Great as a table or grating cheese, tasty flavour, pleasantly spicy as a result of the use of lamb rennet, a property that becomes more pronounced with aging. The interior has a dense texture with white paste. The rind features the distinctive marks left by its traditional wicker basket mould. Target market: Italy and worldwide.

it pairs well with aged red wines; aromatic qualities on the nose mainly reminiscent of flowers and ripe black and red berry fruits, rich in complexity, scents of liquorice root, fenugreek and carob against a spicy, smooth and elegant background; powerful and harmonious on the palate, velvety tannins, with long, balsamic finish.

Beers
it pairs well with highly fermented beers that are complex on the nose with an intense aroma of fruit and flowers with slightly spicy notes of caramel and acacia honey; round, well structured and smooth in the mouth; with an elegant, moderately bitter finish.
