Moilterno
Ingredients

For 4 people:

  • polenta (leftovers or polenta that has been allowed to cool)
  • 200g Moliterno cheese
  • 4 thin slices of bacon (pancetta if available)
  • champignon mushrooms
  • oil for frying
  • salt and pepper as required
Method

cut the polenta into slices roughly 1 cm thick and prepare squares. Fry in oil until they are nice and golden brown. Once ready, place them on absorbent paper. In the meantime, thoroughly brown the diced bacon or pancetta in a frying pan, add the finely sliced mushrooms and cook for a few minutes, adjusting salt and pepper to taste Top each slice of polenta with slivers of Moliterno cheese and sprinkle over the piping hot bacon and mushroom mixture. Serve straight away.
